Mozzarella with Tomatoes and Spinach

Ingredients (for 2 people):

mozzarella  •  tomatoes  •  olive oil  •  baby spinach  •  pine nuts  •  grated parmesan  •  salt and pepper  •  balsamic vinegar  •  mustard  •  whole wheat bread

Preparation

Slice mozzarella and tomatoes and lay them out on a plate. Season with salt and pepper and sprinkle with balsamic vinegar and 2 tsp oil. Wash spinach and prepare dressing from vinegar, some water, 1 tsp oil, 1 tsp mustard and spice. Pour the dressing over the salad and sprinkle it with pine nuts and parmesan. Serve with whole wheat bread.
